Preheat your oven to 200 degrees and line a baking sheet with parchment paper and set aside.
In a large bowl, add the cinnamon and the applesauce and stir the mixture to combine cinnamon and applesauce until it forms a thick dough.
Remove the dough and place it on a hard surface (counter top or table) and knead with your hands until the dough is fully formed.
Sprinkle a small amount of cinnamon onto your work surface. Using a rolling pin roll the dough out to a 1/4 inch thickness.
Use cookie cutters of your choice to cut out ornaments in the shapes that you want to make.
If you have any leftover dough repeat the process and roll dough again and cut more shapes out with the cookie cutters.
Use a drinking straw and poke a small hole in the top of each ornament. (This is where you will string the ribbon when they are done)
Place the cinnamon handmade ornaments on to the prepared cookie sheet.
Smooth the rough edges of the ornaments if you want to, or you can leave them having a rustic look.
Bake the ornaments for two and a half hours.
Remove the ornaments from the oven and allow them to cool completely. You can place ornaments on to a wire rack to finish cooling if you want to.
Decorate with paint if desired or leave them as it.
Cut the ribbon and place it thru the hole at the top of the finished ornament and tie it in a knot.
